    All kaya gurus please come in and share.

    good: chin mee chin confectionary along east coast road.
    the kaya is smooth, and rich in flavour.
    the swiss roti was nice.
    a must go everytime i go back

    last time brought a take away container from chin mee chin; tio chiong kong at aussie quarantine

    another one is at the amoy st hawker centre called "ah seng". kaya is somewhat similar to ah kun old school kaya. the bread is nicely toasted.

    whilst on the topic of kaya; how about the bottled ones? (read: quarantine safe!) my friend bought a few bottles for me, and below my comments on the following brands

    good:
    ah kun - the authentic smell still there; but the color (now green compared to a golden color) and texture (somewhat creamier than wang's but still quite pasty) is way off what i used to enjoy as a kid

    average:
    toast box - color is funny.... orangey color (i never seen kaya like that - maybe the honey). taste ok, but nothing special same texture as ah kun.

    not recommended:
    wang cafe - no smell no taste very pasty like spreading cement

    YEah... I LOVE KAYAs too...
    THe best and only best to me is the shop beside Holy Family Church. Always goes there but never note the name... Is tat Chin Mei Chin? Its my family favourite for generations since my great grand mother....

        To make best Kaya or egg jam, u must use good.......

        i) lotsa Gula Melaka
        ii) Freshly squeezed coconut milk
        iii) Pandan leaves juice
        iv) Fresh eggs and
        V) lotsa of patience ....... !

          i tried (and failed)

          1) canned coconut milk
          2) eggs
          3) brown sugar
          4) stir like crazy (3hrs)

          to be honest, im can do without pandan in my kaya. my kaya about same as wang cafe one if you give to builder, later he can use as cement .

            u need to "double-boiled" it. All the ingredients in one small pot and place it into a bigger pot with boiling water. Stir till the mixture coagulate.... and u have your own home-made kaya!

              i dont have a double boiler, but i got creative, and used a stainless steel pot put water to boil, then i use a claypot to sit inside. in theory should work.

              just curious, can i put some water at the end to give it a creamy texture? at the moment, mine quite lumpy/paste-like. my bro's friend mom manage to make very good kaya, but she is those typical ahsoh that will not teach you how to make.

                no. you dont add water towards the end. if it is lumpy, likely stirring not enough or milk not enough.
