    Tried both, just one word....
Super exxxpensive & lots of MSG (way too much), my friend's wife can detect MSG easily with just a small sip, becos she said is like hard liquor(burning sensation). I'm very tolerance to MSG but, still had the after effect even after a few hours.
Why pay good money at the expense of your health, only Chinese New Year reunion steam boat (zero MSG) is still the best.

I so happen to be a lover of fish head steamboat as well. I would recommend is Nam Wah Chang at North Bridge Road. Traditional charcoal fire, fresh and reasonable serving of fish + accompany ingredients. (veggie, tofu, dried fish, fried yam etc). Additionally, they are one of the few left that still offers the traditional Teochew favourite 'Song He' fish head. Here's a more in depth review of the place.

    Cheers.
I used to patronize Nan Hua Chang and would always request for pomfret fish. Primarily because it is near boneless and my kids can enjoy. However i noticed changes to the pomfret fish they use. The fish texture is different, harder and color is darker. My suspicious is that they may have change to using frozen pomfret instead of fresh pomfret. This is my guess. Even my kids can distinguished the difference. Any brother here experience that.
